Epicure's Quick Chicken Cacciatore

Using low-sodium canned tomatoes is a great way to help reduce sodium intake - your heart will thank you!

Cook Time: 30 - 40 minutes


2 cups (500 ml) sliced mushrooms
1 - 28 oz (796 ml) can diced tomatoes
1 Tbsp (15 ml) Epicure’s Balsamic Vinegar
1 Tbsp (15 ml) Epicure’s Classic Vinaigrette Mix
4 chicken legs, bone in, skin removed
1 - 2 green peppers, coarsely chopped


1. Combine half the mushrooms with tomatoes, Balsamic Vinegar and Classic Vinaigrette Mix in a large sauce pan. Bring to a boil, reduce temperature to medium and simmer for 10 minutes.

2. Submerge chicken in sauce. Continue to cook, uncovered, for an additional 30 minutes.

3. Add green peppers and remaining mushrooms. Continue to cook for 10 minutes.
